Chobani Layered Pancakes with Double Berry Sauce

Breakfast is definitely my favorite meal. It gets me going and sets my mood for the day. I’m not going to lie, on mornings I don’t have to wake up to an alarm it’s breakfast that gets me out of bed
This pancake recipe is simply scrumptious! I always have frozen berries on hand to add to smoothies but this morning I mixed things up and made a berry sauce to complement fluffy gluten free pancakes. On top of each pancake I smeared plain, fat free Chobani Greek yogurt to add a little protein to the meal.
For the
Pancakes
Simply prepare your favorite pancakes. Smear 1 Tbsp plain, fat free Chobani Greek yogurt on each pancake and stack together.
For the Double Berry Sauce
- 3 cups apple juice
- 1/4 cup maple syrup
- 2 cups blueberries (fresh or frozen)
- 2 cups raspberries (fresh or frozen)
- 1/4 cup cold water
- 1/4 cup cornstarch (for thickening)
In a saucepan, combine apple juice, maple syrup, blueberries and raspberries and bring to a boil. In a small dish, combine the cold water and cornstarch, mixing well. Pour the cornstarch mixture into the saucepan and stir. Remove from heat and pour sauce over stacked pancakes.
Add a side of sliced fresh strawberries if desired.
** This recipe makes approx 6 servings. Remaining sauce freezes well and can be reheated or frozen in ice cube trays to add to sparkling water or seltzer.

Big Chobani News!

If you have been reading my prior posts regarding FNCE 2011 or follow me on twitter, you would know just how excited I am to hear that Chobani is launching 3 brandspankin’ new flavors in Jan 2012. The best part? I was lucky enough to taste all 3 new flavors and
can confirm they are just as ahhmazinggly good as all the other Chobani varieties.
Normally I’m not a huge passionfruit fan, especially when it comes to yogurt. I just didn’t like tiny seeds in my otherwise smooth and creamy dairy goods. Well, this all changed at FNCE when I tried Chobani’s new Passionfruit flavor. SOO good.
The two new other flavors included Blood Orange and Apple Cinnamon.
Let’s just say the Cinnamon Apple was like apple pie in a cup.
A few reasons I love Greek yogurt, and Chobani in particular, is that Greek yogurts are double strained so are thicker and also have a TON more protein than regular yogurt varieties. Just one 6oz fat free Chobani has 14g protein!
I love using Greek yogurt in a number of ways, including adding it to smoothies for an extra protein source but an added bonus is it makes the smoothie super creamy and thick. Plain, non- fat Greek yogurt is also an excellent alternative to sour cream for baked potatoes etc. Most people cannot even notice the difference between the two!
Oh and other BIG Chobani news? They are going to Australia!!! At the FNCE conference I spoke with the Head Chef from Chobani and he said they had already bought a yogurt factory in Melbourne and their headquarters will be in Sydney. How exciting!

FNCE Day One: Starstruck!

Wowee did I have a fun day today!
I am currently in San Diego for the American Dietetic Association’s annual Food and Nutrition Conference and Expo and let me tell you: In the 3 years that I’ve attended the cialis buy online conference, it sure does not disappoint!

I started off my day in a session highlighting employment opportunities for RDs overseas. It was really informative and confirmed the fact that there really are endless opportunities for employment in the health industry.
After session one I headed into the expo to seek out Bob Harper, celebrity trainer for the Biggest Loser and spokesperson for Quaker Oats. I have Bob’s Strength Yoga DVD and am a huge fan.
After some frantic searching (we were on a determined mission to make the meeting happen) we found Bob!
He was sooo nice, even commenting on my pretty flower before posing for the pic! Yup, he sure knows how to make a girl blush ![]()
My friend Meghan and I were so starstruck! We could’ve been lining up to meet Brad Pitt with how giddy we were.
What’s even cooler was he had signed copies of his newest workout DVD to giveaway. When I get back to Colorado I’ll check it out and be sure to write a review.
Other exciting happenings of the day included meeting Miss California 2011
And getting to try one of three new Chobani flavors launching in Jan 2012!
I sampled the new blood orange flavor (delicious) and might have the opportunity to try the other newbie flavors passionfruit and cinnamon apple in the next few days. Yum!
