Dinner at HuHot Mongolian Grill

I’ve just returned to Phoenix from a quick trip to Colorado to see Kevin. It did feel a little odd being back in my old college town and seeing everyone head off to class when I didn’t have any class obligations of my own. One of the things I w
as most excited about for the trip (apart from seeing the boy of course
) was visiting a few favorite restaurants that I dined at rather frequently during undergrad.
On Saturday night Kevin, myself, our friends Matt and Bridget along with Matt’s twin brother Patrick all headed to Fort Collins for a warrior feast at HuHot Mongolian Grill to celebrate Bridget’s 21st birthday.

The thing I have always loved about this restaurant is how you can change up your dish with each visit to the grill, experiencing a wide range of tastes all in one night. The fresh produce bar also allows me to pile my bowl rather high. Oh, and they also have a make-at-your-table smore’s desert that is a super fun way to end the meal
Endless produce and smore’s? Need I explain why it was one of my fav places??
To start off you grab a bowl and select your protein then head to the produce bar and add additional ingredients before heading over to the sauce bar to create a unique flavor of your choosing.
Being a Saturday night, it was quite busy so we had to wait in line for our food to be cooked.
However, when the “Grill Warriors” put on a cool show like this right before you the wait didn’t seem long at all
And the food? Well that just made
the wait even more worthwhile
I opted for the ‘flavor of the season’, a coconut dish with tofu, watercress, bamboo shoots, peas, snow peas, pineapple and shredded coconut on top all cooked in the suggested coconut sauce concoction.
Although the restaurant is buffet style and you can try as many dishes as you wish, I made sure to leave room for desert – smore’s!!
Cooking Smore’s at the table was such a fun way to round out a great night.
And yes, please excuse the shadows of my hands in the pictures above. Clearly I was too excited to dig into the yumminess that awaited me that I didn’t pay any attention to the task at hand, that is, capturing just how good the food was so you could cyber-experience it with me
Fun fact: Kevin and I took my Mum here during one of her visits to Greeley and she was so hooked
on the make-your-own-smore’s idea that she went back to Australia and ordered one of the mini tabletop grills from Amazon so she could make her own smore’s whenever she liked. The only problem? We don’t have graham crackers or Hershey’s in Australia so now she has to stock up with each trip!!
