Summing Up a Super Busy Week

This past week was supperrrr busy but probably my favorite week of the internship so far. It was my last week of clinical rotations at McKee Medical Center and although I have really enjoyed the inpatient experience, this week I was primarily workin

g with the oupatient dietitian helping with nutrition classes, cooking classes, cardiac rehab and sitting in on patient counseling appointments. The days were alot longer than I’m used to (about 10-12 hours each day) but I loved the busy pace we worked at.

On Thursday night I helped Elizabeth Long MS, RD, CDE at a community cooking class. The focus of the class this month was ‘Delete the Wheat’ – cooking gluten free. We made four delicious recipes:

  • Gluten- Free Veggie Lover Pizza
  • Gluten-Free Blueberry Muffins
  • Gluten-Free Banana Pancakes
  • Pumpkin Yogurt Sauce (for pancakes)

The best part of working at these cooking classes? The taste-testing, of course! :-)

I also finished moving into my new place this week, a house i’m sharing with three other girls until I make the move to Phoenix in exactly two months (not that i’m counting or anything ;-) )

My new roommate Cayla was lucky enough to be given this huge box of extra-ripe Palisade peaches.

My first thought after seeing this? Peach Cobbler!!!

So we got right to it..

Cayla cut up the juicilious peaches while I made the topping. 40 Minutes later, we had ourselves one tasty cobbler.

We both agreed that the only thing that could’ve made this better was a small scoop of vanilla fro-yo on the side!

After such a busy week I was ready for some relaxin’. My bf Kevin also arrived back into town this week to start the Fall semester at UNC after going home for the summer, so Friday night we headed to the driving range to hit some balls (or in my case, attempt to hit the ball).

When we pulled up the weather didn’t look too promising, but the clouds passed and we were able to get some golfing in.

I have only started learning the basics of golf and its a good things Kevin is a verryyy patient instructor, coz let me tell you: my swing aint too pretty right now, so lucky my clubs make up for it :-)

Personally, my goal right now is to simply make contact with the ball…

    What a great week! I recently made an apple crisp.. and the ice cream/fro yo makes it! But yours still looks amazing!
    I used to take golf lessons. It’s not easy but keep practicing. I’m sure you’ll see a difference in your swing in no time.

      I love the hot/cold sensations when eating a warm dessert with ice-cream!
      The golf swing is definitely coming along, just takes a lot of practice and patience :-)
